Perhaps Spain's most famous cheese, manchego, is now one of the more popular cheeses in the U.S. Mild and nutty, this semi-firm sheep's milk cheese is ideal for serving as an appetizer with black olives, chorizo (Spanish sausage) or cured ham, or as a refreshing meal-ender with honey and/or fresh figs. Nibble with sherry or dry white wine.
