You heard it here first

Just In

        Fresh ground bison produced by Vista Grand Ranch in New Richmond will be available in area Bigg's stores and Dorothy Lane Market in Springboro and Dayton beginning Saturday. Fresh bison, which is lower in fat than beef or chicken, is rarely available for retail sale in markets outside Colorado. The ground bison costs about $4.99 per pound. Vista Grand bison bratwurst should be available in the same stores by July.

Market Scan

        Fiddlehead ferns are young, tightly coiled fern fronds that resemble the spiral end of a violin or fiddle. Fiddleheads are a rich, deep green color, with a chewy texture and flavor like a cross of asparagus, green beans and okra. Look for small, firm, brightly colored ferns with no sign of softness or yellowing. Refrigerate tightly wrapped and use within two days. Wash fiddleheads and trim ends before steaming, sauteing or simmering. (Available at Madison's at Findlay Market and www.earthy.com.)

Sip It

        Allgauer Cambonator ($2.50/ pint): One of the newest doppelbocks available in the Tristate, and a welcome addition. Very dark brown, with a rich, caramel chocolate flavor (almost like a Tootsie Roll) and just enough hops to produce a perfectly balanced beer. Thanks to Manfred Schnetzer of White Oak for recommending this one. It has become one of my favorites.
